Summer Cucumber Salad

Who doesn't like fresh vegetables from the garden.  I think we all do.  One of my favorite summer vegetables is cucumber.  Fresh, clean, crisp cucumbers can be used in a variety of ways.  Peeled and cubed in macaroni salad.  Thinly sliced for cucumber sandwiches.  Coarsely chopped in a fresh garden salad or laid out on a cold plate.  All delicious.  But today we are going to make a summer cucumber salad that is out of this world.  It is so simple to make and lovely served at the table.  Let's get started.


So, here is the ingredient list:  two medium cucumbers, thinly sliced; 1/3 cup cider vinegar; 1/3 cup cold water; two tablespoons sugar; one-half teaspoon salt; and one-eighth teaspoon white pepper.


Using a knife with a very sharp blade, cut off both ends of the cucumber and discard.


Slice both cucumbers into thin slices on a large cutting board.  Two medium-sized cucumbers, thinly sliced will yield a great deal more slices than you might imagine.  So be sure to use a large cutting board.


Place the cucumber slices in a glass bowl.


Start the dressing by first adding two tablespoons sugar to a glass bottle with a tightly securing top.


Then add the remaining ingredients to the bottle - vinegar, water, salt and pepper.  That is white pepper on top of the mixture in this picture.


Secure the top in place on the bottle and vigorously shake for at least thirty seconds.  Check to see if the sugar and salt are completely dissolved.  If not, shake it some more until they are dissolved.


Pour the dressing over the cucumbers in the glass bowl.


Using your clean hands, mix the cucumber slices together in the bowl so that they are all covered with the dressing.


Snap on a tightly fitting lid or cover with Saran wrap and place in the refrigerator for at least three hours.  During this three hour period, remove the bowl and toss the cucumbers so that they all get a turn to marinate in the dressing.

I serve these in a glass bowl or plain white bowl at the table with the dressing.  If you are making them just for yourself, then you can leave them in the bowl and just take from it as you see fit.  They make for a great between meal snack and they will stay fresh in the refrigerator for three to four days.


Of course, do not forget to set aside two fresh slices of cucumber to place over your eyes to reduce puffiness after a day spent cooking.  Lie down in a bed atop freshly laundered linens and place one cucumber slice over each eye for about 15 minutes.  It works wonders for the mind and body.
