Make Your Own Catalina Salad Dressing

What is your favorite salad dressing?  Mine is Catalina.  It is positively wonderful.  And if you make it at home, it is even better.  Today I am going to share my recipe for this wonderful salad dressing.


Here we have a beautiful wedge of iceberg lettuce dressed with our freshly made Catalina Dressing and glazed walnut pieces.  This is divine beyond all definition.  Now let's go through the steps.  It is really very easy to make.


On our board we have 1/2 cup white sugar, 1/2 cup red wine vinegar, 1/2 cup canola oil, 1/4 cup reduced sugar ketchup, 1 teaspoon smoked paprika, 1/2 teaspoon onion powder, 1/2 teaspoon dried parsley flakes and 1/2 teaspoon salt-free Italian seasoning blend.


Once all the ingredients are measured, just combine them all into a medium sized stainless steel mixing bowl.


Find your electric hand mixer and the whisk attachments and whisk the ingredients together until the sugar has completely dissolved, or about 4 minutes.  Do not use the blender.  I do not like to use the blender when making salad dressings.


Once everything is well blended, transfer the prepared salad dressing to a bowl with a pour spout. You will be glad you did this when it comes time to transfer to a glass container.


I used this glass oil dispenser bottle to store the dressing.  You could just as easily use a mason jar or any other glass receptacle with a tight fitting lid.

A few additional notes below.


The Glazed Walnut Pieces to sprinkle over the iceberg wedge are from Fresh Gourmet.  They can be added to your salad bowl should you opt for a chopped salad instead.


I do not know if many of you are aware that there is "Reduced Sugar" ketchup on the market.  It is not essential for this recipe.  You could use regular ketchup.  I used this because I must watch my sugar intake and there is already one half cup of sugar in this recipe.  The choice is up to you.


Finally, just for reference, here is a picture of the bottle of Mrs. Dash seasoning blend.


To assemble your wedge salad, simply cut a head of iceberg lettuce into four quarters.  Place one quarter onto a plate.


Generously dressed with your freshly prepared Catalina dressing.  And don't be afraid to decorate the plate a little if you desire.


Add a sprinkling of glazed walnuts and enjoy!

Catalina Dressing

Ingredients:
½ cup white sugar
½ cup red wine vinegar
½ cup canola oil
¼ cup reduced sugar ketchup
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon dried parsley flakes
½ teaspoon salt-free Italian seasoning blend

Combine all ingredients in a medium stainless steel bowl.  Using the whisk attachments on your hand mixer, blend for 4 minutes or until sugar is completely dissolved.  Pour into a glass receptacle and refrigerate.  To enjoy the freshest salad dressing, use within one week.
