We wanted something sweet this past weekend, but I did not want to be in the kitchen all day, so I went through the recipe box and found this recipe for Easy Cherry Cake. This is not an elegant dessert. It is quick and delicious and something that will make everyone in the house happy with very little effort. Here we go!
We will start with a yellow cake mix. I used this from Pillsbury, but if you have a favorite brand, certainly use that. The brand doesn't matter so much as they are all pretty much the same.
Into a large glass bowl with the yellow cake mix.
Add one half cup of water.
And one half cup of vegetable oil.
Add three large eggs to the mix.
Using an electric hand mixer on medium speed, mix all these ingredients together for two minutes.
Generously spray a 9 inch by 13 inch glass baking dish with butter flavored Pam.
Pour the batter mix into the prepared baking dish.
You will need a 21 ounce can of cherry fruit filling.
Add the entire contents of the can of cherry filling on top of the batter mix in the baking dish.
Swirl the cherry mixture throughout the batter mix causing a marbling effect. I used the handle end of a rubber spatula to achieve this. Don't be shy about mixing the batter and the cherry filling. Cover and bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
And here is what you will have about an hour later. Cool in the pan on a wire rack or, if you have a gas range, I frequently place baking dishes hot from the oven on top of the burner grates on the range top. It allows air to circulate around the dish and has the same cooling effect as using a wire rack.
We helped ourselves to this with no further adornment. If you found yourself with guests coming over on short notice, you could prepare this quickly and then sprinkle powdered sugar on top just before serving. Quick, easy and delicious! Perfect for any time of year.
